Sarah Michelle Geller has never been afraid to bite a bit.
From Buffy’s Buffy Summers’s sharp wit to the Vampire Slayer’s sharp wit to the atypical edge of Kathryn Mertewile with cruel intentions, the actress and producer 48 have developed a successful career with characters that embraced boldness. It makes sense that the cocktail of her choice is a Negroni.
“I like having one good cocktail at the end of the night,” Gellar shared in an exclusive interview with People. “The key to that is that to make a proper negroni, you need campari, you need to have gin, you need to have vermouth, so it’s always made right.

Gellar, who worked with Campari to host the 13th Negroni Week, The Bitter-Forward cocktail and the bartender community behind it, said he loves classic drinks because “you’re guaranteed to always get a good cocktail.”
“I think sometimes it’s another cocktail. It’s like how each bartender makes it, but like this, you got your Campari.
In partnership with Imbibe Magazine, Negroni Week (September 22-September 28) has evolved into a global philanthropy initiative, raising funds for Slow Food, an organization that maintains biodiversity and equity through food cultures in more than 160 countries.
To mark this opportunity, Campari will launch a Stay Bitter Capsule Collection. This is a limited edition crew neck, tote and hat designed to embrace the bold edge of Negroni signatures in everyday life.
For Gellar, who calls himself a “big supporter of being able to eat himself right and access healthy food,” the campaign’s message comes close to his home. “When they called me and said they were going to do this capsule product and tie it together with a gift for slow food… I was like, ‘Wow, what a great combination’,” she says. “Now I’m going shopping and drinking cocktails, all for good reason.”
I think that sense of “bitterness with purpose” is reflected in the character that induces nostalgia. “For Kathryn Mertewiil, Negroni was clearly a drink of her choice. She was a classy girl. She drinks as she is probably too young, but it was definitely her cocktail,” she says with a laugh.

“And Helen (I know what you did last summer) is actually the leader of the Stay Bitter Campaign, as she’s still upset that she’s dead. She’s very bitter about it.
Still, Gellar argues that bitterness is not a bad word – whether it’s character traits or a flavor note. “When you’re talking about the bitterness of drinks, you’re talking about quality ingredients, flavor profiles. Same as food – I’m not a bland food person, I’m not a bland drinker,” Starr said.
When asked about the perfect time for Negroni, she laughed, “The end of the workday. Or when your plane is late, it really really helps at the airport bar.”
With Negroni Week just beginning, Guerard hopes fans will join her and raise her glasses to give back. “There’s no need for an excuse to have a negroni, but when I’m doing it for charity, I’m doing it for good,” she pointed out.
And as she sipped on the Negronis, she looked ahead. Next spring, Gellar will return to the big screen with Ready. Here comes the sequel to the 2019 cult-popular horror drama. He teased the film, which also stars Samara Weaving, Kathryn Newton and Elijah Wood, adding, “We’re very excited about it.”
In the meantime, she keeps it simple: at the end of a long day, a correctly made negroni.
